Marriott's Luxury Collection property on Santorini, built into a 400-year-old winery in the medieval village of Megalochori, which puts it on the wine-growing side of the island rather than the caldera rim. Restored stone buildings sit around courtyards with two pools between them. Accommodation climbs from the Dorian, Ionian, Aegean and Athenian suites through the Olympian, Corinthian and Grecian villas to the Presidential Villa and the Nafsika Estate, the last of which has a private helipad. Three rooms handle dinner: Alati, the poolside Pergola and a private dining room. The cave-cut Elios Spa is set inside a 100-year-old wine cellar, and the fitness centre, also cut into the rock, is open around the clock with Cybex machines, free weights and an outdoor patio. Choose it if you want Santorini's food, wine and quiet rather than a sunset terrace, and accept that the caldera view is a drive away.
