In the inland wine village of Pyrgos, chef George Hatzigiannakis has cooked from Santorinian ingredients for thirty years: fava in three textures, sun-dried tomatoes from Mesa Gonia, capers from Akrotiri. The wine list is deepest in Assyrtiko. Book a month ahead in summer.
