One of Santorini's benchmark Assyrtiko producers, and the tour-and-tasting to book if you like wine without thinking of yourself as a wine person. Paris Sigalas's estate near Oia works basket-trained kouloura vines on volcanic soil, some of it old ungrafted pre-phylloxera stock. The 90-minute visit runs six wines with small plates in the kanava-style courtyard, €45 a head, booked a day ahead. Line up a driver, and don't drive after.

One of Santorini's benchmark Assyrtiko producers, on the flat land near Oia where the vines are trained into basket-shaped kouloura against the wind. The tasting room sits in the middle of the vineyard, and the reason to give it an afternoon rather than an hour is that the food is as good as the wine: the estate pairs its bottles with traditional Santorini and Cycladic recipes on a menu run by its award-winning executive chef, Kyriaki Fotopoulou. The Sigalas Experience pours five of the limited-production wines with a dish chosen for each, and a sommelier walks you through the old vineyard first. Open daily from 11:00 to 21:00, with tastings by reservation, and an a-la-carte menu if you would rather just eat and drink.
