A 19th-century wheat-baronial estate in the Madonie mountains, two hours inland from Palermo: the slow, secret Sicily that gets none of the press.

A 600-hectare working estate in the Madonie mountains (more than 40 hectares of it under certified-organic cultivation, plus 50 hectares of woodland the family reforested in 2005) owned by the Saeli-Rizzuto family for five generations (over 200 years) and reopened as a 17-room hotel by Manfredi Rizzuto in 2008. The architecture is the wow: a stone-walled baglio (estate house) the size of a small village, with the original cattle stalls and barns converted into vaulted-ceiling suites. The kitchen runs on the farm's own produce. The pool overlooks the wheat fields. There is no nightlife, which is deliberate: this is for people who want to read on a terrace for three days and not see anyone they didn't come with. Two hours from Palermo, three hours from Taormina.
