A Palermo dynasty since 1944, and the Palermitan home of the Setteveli, the seven-layer chocolate-hazelnut cake the 1997 Italian Pâtisserie team won the Coupe du Monde with; Cappello re-engineered his own version, making it a Palermo sweet-counter fixtus symbol.

Two locations in Palermo; the one on Via Colonna Rotta near the cathedral is the original. Look for the long counter of ricotta cannoli, paste di mandorla (almond paste cookies in the shape of citrus fruit), cassatine, and the Setteveli, the seven-layer cake the Italian team (Biasetto, Beduschi, Mannori) won the 1997 Coupe du Monde de la Pâtisserie with. The recipe is trademarked by those three northern masters; Salvatore Cappello re-engineered his own Palermitan version independently, making it the city's sweet status symbol. Stand at the marble bar, ask for the cassata they finished that morning, and eat it with an espresso. Open from 7:00 a.m. (closed Wednesdays).
