A trattoria in Mamoiada, the carnival-mask town deep in Barbagia. Family-run, mountain food, you don't find it unless someone tells you.

Via Vittorio Emanuele, in Mamoiada. Small dining room, a little plain on purpose; the kitchen does mountain Sardinian without shortcuts. Order the culurgiones (pleated by hand on the spot; Mamoiada is one of the towns that takes the pleating seriously), the lamb with wild fennel, and a glass of Cannonau from the surrounding hills, which include some of the better small producers in Sardinia. If you're in town for Autunno in Barbagia (Sept–Dec festival weekends), come on a Sunday for lunch and stay for the procession.
