Marrocco, born in 1995 in nearby Gallipoli, has run this kitchen since February 2017, and works regional ingredients with real technique: parmigiana with burnt-wheat béchamel, sweetbreads with raw Gallipoli shrimp. Two tasting menus: a seven-course surprise menu, and the tenth-anniversary menu. The wine list is the southern Italian wine education most people miss. Limited seating, dinner only, 19.30–22.30; closed Tuesdays. Reserve well ahead.
