Inside Borgo Egnazia, but worth eating at even if you're not staying. The kitchen is vegetable-led: the menu follows the seasons, each dish built on a single vegetable, with courses grouped by botanical family. The tasting menu is the order; do the wine pairing. Service has been trained to a Mediterranean luxury standard without going stiff. The pricing reflects the address. Dinner only Tue–Sat, 7:30–10 p.m.; closed Sundays and Mondays.
