Critabianca
The Cut· research-verified, not yet visited
A six-room estate in the deep Salento countryside, owned by Alessandro Ghione, with citrus groves and an organic vegetable garden outside the windows, and candlelit orchard-to-table dinners.
A country estate in the Cutrofiano countryside, a few kilometres from Galatina in the deep Salento. Six rooms, each with a distinct color palette, opening onto citrus groves and stone terraces. Dinners are slow, local, candlelit; the orchard-to-table menu pulls from the family's own citrus, fruit trees, and organic vegetable garden, paired with a local Salento wine list (Negroamaro, Primitivo) rather than house production. Cooking classes are on request, never on display. Six guest rooms in a working country house, which is the whole of it. The warmer choice for a quiet Salento base.
