In Cisternino, several butchers (macellerie) double as evening grills. You walk in, pick from the meat counter (bombette, pork roulades filled with caciocavallo; salsiccia; lamb skewers), and they grill it on the spot. You eat at plastic tables on the street with house wine in plastic cups. €15 a head. Zio Pietro and Ai Tre Punti both do it.
