Cecchini recites Dante while he works and has been cutting Chianina beef in his Panzano shop since 1976. Solociccia is the multi-course set-menu lunch (no bistecca, all the other cuts) with Chianti flowing and lardo di Colonnata melting on warm bread. Drive 40 minutes from Florence.
